Thanksgiving Recipes : Broccoli Chowder

 
 
 
 
This is normally served on Christmas eve at my home, last year we added it to our Thanksgiving menu and it was such a hit!!!
 
 
 
 
INGREDIENTS:
1lb. Broccoli
1 1/2  cups chicken broth
1 1/2 cups milk*
1 1/4 teaspoon ground pepper
1 1/2 cups grated cheese**
2 tablespoon butter***
salt to taste
 

 
 
 
 
 
 
 
 
 
 
 
 
 
DIRECTIONS:
(Directions for four servings)
Pour broth into large pot, bring to a broil
Add broccoli; reduce heat
Simmer uncovered 3 minutes
Cover; cook 10 minutes OR until broccoli is just tender
Remove broccoli with slotted spoon
Chop into bite size pieces
Add milk and pepper to stock
Bring to boil, stirring occasionally
Stir in cheese, butter and broccoli
Heat until chees is melted... DO NOT BOIL
Add salt and pepper to taste
 
 
 
* I use evaporated and whole milk
** I use Velvetta with a little cheddar if avaliable
*** I use Nucoa margerine, I like it better than any other margarine or even butter (this may be a personal taste preference, so if you want to use reall butter, do so)
